RECIPE OF THE WEEK: ALMOND & LEMON CRUSTED FISH WITH SPINACH

This week enjoy almond & lemon crusted fish with spinach. Paired with a white fish like cod or halibut makes this a foolproof way to shake up your fish dinner.

Cook Time: 25 Mins         Total: 25 Mins      Servings: 4

Calories: 244kcal    Carbohydrates: 8g    Protein: 27g    Fat: 12g    

Ingredients/ Equipment:

  • Zest and juice of 1 medium lemon, divided
  • ½ cup sliced almonds, coarsely chopped
  • 1 tablespoon finely chopped fresh dill or 1 teaspoon dried dill
  • 1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided
  • 1 teaspoon kosher salt, divided
  • Freshly ground pepper to taste
  • 1 1/4 pounds cod (see Tip) or halibut, cut into 4 portions
  • 4 teaspoons Dijon mustard
  • 2 cloves garlic, slivered
  • 1 pound baby spinach
  • 4 Lemon wedges for garnish

Directions:

  1. Preheat oven to 400 degrees F. Coat a rimmed baking sheet with cooking spray.
  2. Combine lemon zest, almonds, dill, 1 tablespoon oil, 1/2 teaspoon salt and pepper in a small bowl. Place fish on the prepared baking sheet and spread each portion with 1 teaspoon mustard. Divide the almond mixture among the portions, pressing it onto the mustard.
  3. Bake the fish until opaque in the center, about 7 to 9 minutes, depending on thickness.
  4. Meanwhile, heat the remaining 2 teaspoons oil in a Dutch oven over medium heat. Add garlic and cook, stirring, until fragrant but not brown, about 30 seconds. Stir in spinach, lemon juice and the remaining 1/2 teaspoon salt; season with pepper. Cook, stirring often, until the spinach is just wilted, 2 to 4 minutes. Cover to keep warm. Serve the fish with the spinach and lemon wedges, if desired.

RECIPE OF THE WEEK: AIR FRYER FISH TACOS

This week enjoy some air fryer fish tacos. A high protein meal that is fast, easy, and delicious!

Prep: 5 Minutes      Cook Time: 10 Minutes     Total Time: 15 Minutes   Servings: 3 Tacos                             

 Calories: 296kcal      Carbohydrates: 39.2g           Protein: 26.2g               Fat: 2.9g

Ingredients:

  • 1-2 bell peppers sliced (or 300 g frozen sliced bell peppers)
  • 2 filets of mahi thawed (224 g)
  • Trader Joe’s BBQ seasoning*
  • Salt and Pepper
  • 6 Extra thin mission corn tortillas
  • 2 cups shredded green cabbage
  • ¼ cup skinny chipotle cream 60 g
  • ¼ cup pickled onions
  • ¼ cup cilantro lime ranch 60 g

Instructions:

  • Pre heat air fryer to 400 degrees. Spray basket with a mist of avocado oil spray and add bell peppers. Cook for five minutes. While bell peppers cook, season mahi filets liberally with BBQ seasoning and a good sprinkle of kosher salt. *You can always just use a good blend of garlic, chili powder, paprika, salt, pepper. Just season well.
  • When the five minutes are up, scoot bell peppers to the sides to make room for the fish. Add fish and cook for another five minutes until done.
  • Toss cabbage in 2 Tbsp of the cilantro lime ranch. Char tortillas over the stove, or heat in a pan with a little oil spray. Build each taco with 10 grams (2 tsp) of chipotle cream, a pinch of the cabbage, a couple tablespoons of the cooked bell pepper, about 40 grams of cooked mahi, a few pickled onions, and a drizzle of the cilantro lime ranch. Recipe of the Week: Walnut Crusted Salmon

Serving Size: 2
Prep Time: 10 minutes

Ingredients

For Toppping:

  • 12oz salmon filet (Wild Caught)
  • ½ cup walnuts, crushed
  • 2 tbs flax meal
  • 2 tsp oregano
  • 2 tsp basil
  • 1 tbs real maple syrup
  • Pinch lemon pepper

For Dressing:

  • ½ cup balsamic vinegar
  • 2 tbs olive oil
  • ½ lemon, squeezed
  • ½ lime, squeezed
  • 1 tsp sea salt
  • Pinch ground black pepper

Directions:

  1. Marinate salmon in balsamic citrus dressing for 30 minutes before cooking. While salmon is marinating, mix together walnuts, flax, oregano, basil, and lemon pepper.
  1. Preheat oven to 350*. Remove salmon from marinade and brush top of filet with maple syrup. Sprinkle the dry mixture on top of fish.
  1. Place salmon on a baking sheet and cook for 15 minutes. Remove from oven and serve with your favorite vegetable!
