Recipe of the Week: Peach and Blue Cheese Salad

Yield: 4 servings

Ingredients:

  • 6 firm peaches, pitted and quartered
  • 1/4 cup plus 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Kosher salt
  • 1/2 cup almonds
  • 3 to 4 cups baby arugula
  • 1 cup of your favorite blue cheese

Directions:

  1. Heat the grill to medium or the oven to 250 degrees F. Add the peaches to a large bowl, drizzle with 1 tablespoon olive oil and toss to coat. Grill for 1 minute per side or warm for 2 minutes in the oven.
  2. Meanwhile, make the dressing. In a small bowl, whisk together the garlic, vinegar, mustard, honey and remaining 1/4 cup olive oil. Season with salt.
  3. Gently mix together the warm peaches, almonds, arugula and blue cheese in a large mixing bowl. Toss with the dressing.
  4. Cook’s Note: I love this served right on top of a steak but it is also great as a side salad.

Healthy Summer Habits to Carry into Fall

The summer months often bring out the happier, healthier side of people compared with the winter version that dreads heading outdoors and shorter days. But these healthy habits are something that should be maintained all year round. Think of fresh picked vegetables, boardwalk biking adventures, and hanging out outdoors. Try these simple tips to carry your healthy habits into the cooler months!

1.Under the hot summer sun, people are more conscious of how much water they are drinking. Hydration is important in maintaining good health and should be a priority year-round. Remember that a good rule of thumb is to drinking half your body weight in ounces of water each day.

2. Summer cookouts are perfect for eating lean and green. Keep grilling your favorite low-fat meats and seasonal vegetables throughout Fall and even the Winter. Try investing in an indoor grill pan for your stove top for when it cools off outside.

3. It’s easier to get up and go outside for a walk when there are long hours of daylight. Make a promise to yourself to stay active as you head into the rest of the summer. Keep your exercise routine going strong! If you’re heading back to school, try breaking it up by doing some exercises for 15-30 minutes a day before and/or after work.

4. During the summer days, we often eat lighter foods with more fruits and vegetables. With cooler months, it’s natural to crave heavier foods. Eating seasonal produce ensures it is fresh and at its best- which means you’ll enjoy it more. Tomato, corn and zucchini season may come to an end, but fall super foods like pumpkins, apples, and Brussels will be popping up next month!

5. Buying your produce at a farmers’ market can save you money, helps support local business, and is environmentally friendly (requiring less packaging and transportation). Plan your family’s meals around your farmers’ market finds- that fresh-picked flavor of locally grown fruits and veggies will have your family craving seconds! Many markets are open well into October, too.

6. The summer provides the perfect climate for outdoor activities like hiking, biking and swimming. With a few extra layers, you can keep jogging or biking well into the fall. The cooler air and drop in humidity will be welcomed after those muggy summer days.

Recipe of the Week: Spicy Watermelon & Feta Salad

A great summertime snack- so easy to prepare and the sweet and spicy mixture is just right!

Prep Time: 20 minutes
Serves: 4

Ingredients:

  • 6 cups cubed watermelon
  • 1 cup red onion, julienne cut
  • Juice of 2 limes
  • Pinch of cayenne pepper
  • Pinch of sea salt
  • 1 cup crumbled reduced fat feta cheese
  • 2 tbsp chopped fresh mint leaves

Directions:

Combine watermelon, red onion, lime juice, cayenne, sea salt, and mint. Mix until well combined, then gently toss in the feta cheese. Serve!

The Lowdown on Your Sugar High

Carbohydrates are naturally found in many foods including fruits, vegetables, grains, and many dairy products. Carbohydrates encompass many types of sugars, starches, and fiber. Let’s focus on sugar, which has a pretty bad reputation especially for those individuals trying to lose weight.

RDA (Recommended Daily Allowance) for men is 36 grams or 150 calories. For women the RDA is 25 grams or 100 calories (4 calories per 1 gram of sugar). To give you an idea of how this fits into your daily caloric intake, here are some commonly eaten sweet treats:

  • 1 cup of strawberries = 7 grams
  • 1 DD Munchkin = 3 grams
  • 12 oz. Mountain Dew = 46 grams
  • 1 Panera cinnamon roll = 35 grams
  • 1 cup vanilla Greek yogurt = 7 grams
  • 1 banana = 17 grams

Over consumption, not just of sugar but total calories, can lead to weight gain when not combined with regular exercise or physical activity. Diets high in sugar are linked to a higher risk of developing Type 2 diabetes especially in conjunction with obesity.

An individual with Type 2 diabetes has an increased resistance to insulin or their body is not producing adequate amounts of insulin. The pancreas produces this hormone (insulin) which regulates the body’s glucose levels. Insulin is released as a result of increased blood glucose levels and help the body metabolize it.

Swapping sugary snacks for those without added sugar or a sugar-free option is a simple way to start. Not only will this reduce your daily sugar intake, but may help with weight loss because of a decrease in the total calories being consumed.

Sugar can be classified into two categories: natural and added. Natural sugars are those that are found naturally in foods such as fruits or milk. Consuming these foods have additional nutritional benefits including fiber, antioxidants, and calcium.

Added sugars are those which have been added to the ingredients of foods and beverages. This includes white sugar, brown sugar, honey, syrup, and any caloric sweeteners (think adding sugar to coffee). Most added sugars in the American diet come from sodas, candy, cookies, cakes, etc. One can of soda can have over 40 grams of sugar- that’s way more than the RDA in just a single drink serving. Note that not all ingredient lists will list “sugar” and it can be found under other names when reading a label. These are some common names for added sugars:

  • Corn sweetener
  • Corn syrup
  • Fruit juice concentrates
  • High-fructose corn syrup
  • Invert sugar
  • Malt sugar
  • Molasses
  • Sugar molecules ending in “ose” (dextrose, fructose, glucose, lactose, maltose, sucrose)

Recipe of the Week: Apple Pie Oat Muffins

Serves: 12 muffins
Serving Size: 1 muffin

Ingredients

  • 2 cups old-fashioned rolled oats (certified gluten-free if necessary)
  • 1 teaspoon baking powder
  • 2 teaspoons apple pie spice
  • 1/4 teaspoon salt
  • 1/2 cup applesauce
  • 1 medium apple, grated (about 3/4 cup)
  • 1 large egg white
  • 1/4 cup pure maple syrup (or honey)
  • 2 teaspoons pure vanilla extract
  • 1 cup unsweetened vanilla almond milk (or milk of choice)
  • 1/3 cup dried cranberries

Optional Additions:

  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup mini chocolate chips

Directions

  1. Preheat oven to 350°F. Spray a 12-cup muffin pan with non-stick cooking spray. In a large bowl, stir together oats, baking powder, seasonings and salt.
  2. Add applesauce, grated apple, egg white, maple syrup, vanilla extract, milk and cranberries, plus any optional additions. Stir well to incorporate.
  3. Allow the mixture to set and thicken for about 3-5 minutes before spooning into your muffin pan.
  4. Fill muffin cups almost completely full with batter. The muffins will not rise.
  5. Bake for 30 minutes and until the center of each oatmeal muffin is set. Allow to cool for 10 minutes before serving. If you don’t allow these to cool before taking them out of the muffin pan, they will fall apart. I used a knife around the sides to make removal easier. After cooling, they will set well. Store in a covered container in the fridge for about a week or freeze for up to 3 months.

Recipe of the Week: Grilled Scallops with Honeydew-Avocado Salsa

Time: 30 minute
Serves: 4

Ingredients:

  • finely grated lime zest
  • 2 tbsp. fresh lime juice
  • 1 tbsp. extra-virgin olive oil
  • 1½ lb. honeydew melon
  • 1 Hass avocado
  • Salt and freshly ground black pepper
  • 2 lb. large sea scallops

Directions:

  1. Light a grill. In a large bowl, combine the lime zest and juice with the 1 tablespoon of olive oil. Using a rubber spatula, gently fold in the diced honeydew melon and avocado. Season the salsa with salt and black pepper.
  2. Drizzle the scallops with olive oil and season with salt and black pepper. Grill over moderately high heat, turning once, until nicely charred and just cooked through, 3 to 4 minutes per side. Transfer the scallops to plates, spoon the salsa alongside, and serve

Recipe of the Week: Rainbow Thai Chicken Salad

INGREDIENTS:

THAI CHICKEN SALAD INGREDIENTS:

  • 3 cups shredded cooked chicken
  • 2 cups shredded purple cabbage
  • 1 cup shredded green cabbage
  • 1 avocado, diced
  • 1 mango, peeled, pitted and diced
  • 1 (large) carrot, julienned or shredded
  • 1 red pepper, cored and julienned (or diced)
  • 1 cup roughly chopped fresh cilantro leaves
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cashews or peanuts

PEANUT DRESSING INGREDIENTS:

  • 1/2 cup natural peanut butter
  • 2-3 tablespoons hot water
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce (if you are gluten-free, use GF soy sauce or tamari)
  • 2 tablespoons honey
  • 1/4 teaspoon sesame oil
  • juice of 1 lime
  • pinch of red pepper flakes

DIRECTIONS:
SALAD:

Toss all salad ingredients together until combined. Drizzle with dressing or toss to combine, then serve immediately.

DRESSING:
Whisk all ingredients together until combined. If the dressing is too thick, add hot water a teaspoon at a time until it reaches the consistency you desire.

Recipe of the Week: Three-Apple Chicken Salad

Three different apple varieties and pecans pump up the antioxidants in this tasty salad. Apples and celery are some of the best sources of fiber. Substitute canned tuna for a variation on this healthy recipe.

Prep: 25 minutes (plus 30 minutes for chilling)
Cook: 25 minutes
Yield: 4 servings (serving size: about 1 cup)

Ingredients:

  • 4 (4-ounce) skinless, boneless chicken-breast halves
  • 3/4 cup diced Gala apple (about 1/4 pound)
  • 3/4 cup diced Red Delicious apple (about 1/4 pound)
  • 1/2 cup diced Granny Smith apple (about 3 ounces)
  • 1/2 cup thinly sliced celery
  • 3 tablespoons chopped pecans, toasted
  • 1/4 cup light mayonnaise
  • 2 tablespoons reduced-fat sour cream
  • 1 1/2 teaspoons stone-ground mustard
  • 1 teaspoon minced fresh or 1/2 teaspoon dried tarragon
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper

Directions:

  1. Place chicken in a small saucepan and cover with water; bring to a boil. Cover, remove from heat, and let stand 15 minutes. Drain, cool, and coarsely chop chicken.
  2. Combine chicken, apples, celery, and pecans in bowl; toss gently to coat.
  3. Whisk together mayonnaise, sour cream, mustard, tarragon, salt, and pepper. Pour dressing over chicken mixture; toss gently to coat. Cover; chill at least 30 minutes.
