Recipe of the Week: Lemon Chicken Piccata

Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 6 servings

Ingredients

  • 5 pounds boneless skinless chicken breasts pounded to 1/2” thickness (or purchased thin-sliced)
  • Sea salt and black pepper to taste
  • 3 Tbsp blanched almond flour
  • 2 Tbsp tapioca flour
  • 3 Tbsp ghee divided
  • 4 cloves garlic minced
  • 1 small onion chopped (about 1/2 cup)
  • 1 cup chicken bone broth
  • Juice of 1 lemon about 2 Tbsp
  • 1/2 cup coconut cream blended before using (the cream is the thick part of a chilled can of coconut milk. It can also be purchased separately
  • 1 1/2 tsp stone ground mustard (optional, flavor boost only, omit if you don’t like mustard)
  • 1/4 cup capers drained
  • Sea salt and black pepper to taste

Instructions

  1. Pound your chicken breast to 1/2” thickness, if necessary, and cut into cutlets. Season with sea salt and pepper on both sides.
  2. Heat a large skillet over medium/medium-high heat. In a shallow bowl, mix together the almond flour and tapioca for dredging. Add 2 Tbsp of the ghee to the skillet.
  3. Once the ghee is heated, lightly dredge the chicken, one cutlet at a time, in the flour mixture, shake off the excess, and place in the skillet. Cook about 4 minutes on each side to cook through. The outside should be golden brown – adjust the heat if you need to avoid over-browning. Remove the chicken to a plate and set aside.
  4. Lower the heat to medium low and add the remaining ghee. Add onions, cook for a minute until translucent, then add the garlic. Cook and stir another minute, until softened. Add the broth and lemon juice, then raise the heat to medium and bring to a boil, stirring occasionally.
  5. Cook for 3 more minutes, then stir in the coconut cream and the mustard (if using). Cook and stir another minute, then stir in the capers. Add the chicken back to the skillet, lower the heat to a simmer and simmer another minute. Serve over sautéed cauliflower rice or veggie noodles. Enjoy!

Recipe of the Week: Quinoa Peanut Brittle

Total Time: 25 mins

Servings: 12
Calories: 123 kcal

Ingredients:

  • 1/2 cup quinoa, uncooked
  • 3/4 cup raw peanuts, chopped
  • 1/3 cup rolled oats, uncooked
  • 2 tbsp. chia seeds
  • 2 tbsp. coconut sugar
  • 1/2 tsp. pure vanilla extract
  • 1/8 tsp. sea salt
  • 2 tbsp. coconut oil, melted
  • 2/3 cup pure maple syrup

 Instructions:

  1. Start by preheating your oven to 325 degrees F and lining a rimmed baking sheet with parchment paper.
  2. In a mixing bowl, combine the uncooked quinoa, chopped raw peanuts, rolled oats, coconut sugar, chia seeds, and sea salt and then stir to combine.
  3. Add melted coconut oil, pure vanilla extract, and pure maple syrup, and then stir again until everything is fully mixed.
  4. Transfer the mixture onto your prepared baking sheet and spread into an even layer.
  5. Place in the oven and bake for 12-15 minutes, watching it carefully near the end to avoid burning.
  6. You’ll know the brittle is ready when the color becomes evenly golden brown and the edges begin to darken, get bubbly, and spread out across the pan.
  7. Let cool completely before breaking into bite-size pieces with your hands.

Recipe of the Week: QUINOA CHILI VERDE

Green is good! This vegan Quinoa Chili Verde is filled with tomatillos, poblanos and mildly spiced, and a nice change from the usual chili routine! Bonus – this recipe is vegan!

Prep Time: 10 min          Cook Time: 25 min          Total Time: 35 minutes                Yield: Serves 4 – 6

INGREDIENTS

  • 1 tablespoon olive oil or 3 tablespoons water
  • 1 large white onion, diced
  • 1 teaspoon garlic powder
  • 1 heaping teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 1b. tomatillos, diced or quartered or 1 can (15 oz) crushed
  • 2 poblano or Anaheim peppers, deseeded and diced
  • 1 cup corn (fresh off the cob, frozen or canned)
  • 1 can (15 oz) cannellini beans or pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup dry quinoa
  • 4 cups vegetable broth
  • salt & pepper, to taste

Optional Garnish:

  • avocado, diced
  • bunch cilantro, roughly chopped
  • cashew sour cream

INSTRUCTIONS

  1. Saute: In a large pot or dutch oven, heat oil/water over medium heat and saute onions until softened, about 5 minutes. Add garlic powder, oregano, cumin and chili powder, cook for 1 minute more stirring frequently, or just until spices and herbs become fragrant.
  2. Simmer: Add tomatillos, poblanos, corn, beans, quinoa and vegetable broth, bring to a boil, cover, reduce heat to low and simmer for 20 – 25 minutes. Remove from heat, uncover and let rest a few minutes before serving.
  3. Serve in individual bowls topped with garnish of choice.

NOTES:

  • Add in a package of organic tempeh for added hardiness. Three Grain Tempeh is my favorite flavor wise.
  • Adjust the spices to your taste. If using broth, you may like it as is, if using water, you may like to add more.
  • Slow-Cooker: This can also be made in the crock pot/slow cooker, add all the ingredients, cover with the vegetable broth and cook on medium or medium-low for 4 hours.

Recipe of the Week: Herbed Lentil Quinoa Burgers

A great way to enjoy BBQ season and have a vegan meal that tags all your micro nutrient needs!

 

Ingredients:

  • 1 15 oz can red lentils
  • 1 cup Cooked Quinoa
  • 1 Small Carrot
  • ½ Bell Pepper, minced
  • 1 Scallion, Chopped
  • 2 TBSP Cilantro, Chopped
  • 2 TBSP Parsley, Chopped
  • ¼ TSP Salt
  • Fresh Ground Black Pepper
  • ½ Cup Cornmeal
  • 2 TBSP Olive Oil

Directions:

  1. Pulse the lentils and quinoa in a food blender until it holds together, if the mixture is too dry, add a tsp of water
  2. Transfer the mixture into a bowl and stir in the carrot, bell pepper, scallion, cilantro and salt and pepper
  3. Shape the mixture into 4 patties, refrigerate for an hour
  4. Spread the cornmeal into a shallow dish and dredge the burgers to coat
  5. Add the olive oil to a heated nonstick skillet
  6. Cook burgers until golden, about 5 minutes each side
  7. Serve however you like, on buns, over salad or plain as is!

Recipe of the Week: Pineapple Quinoa

A quick dinner that is not only sweet but savory! Perfect for a night where you are short on time.

Ingredients:

  • 1 cup Quinoa
  • 8 ounces 100% Pineapple Juice (not from concentrate!)
  • 8 ounces water
  • 1 tablespoon Grapeseed Oil
  • 1 cup Fresh Pineapple, cubed (may use tidbits)
  • 1 Red Bell Pepper, chopped
  • 1 Green Onion, chopped
  • 1/4 teaspoon Sea Salt
  • 1/4 teaspoon Crushed Red Chile Pepper

Directions:

  1. Prepare quinoa according to package instructions, replacing half of water with pineapple juice.
  2. Coat skillet with grape seed oil. Add pineapple and pepper. Sauté until the pineapple and pepper soften. Add green onion, salt and red chile pepper. Sauté for an additional two minutes.
  3. Combine pineapple mixture with quinoa and serve.
  4. Enjoy!

Recipe of the Week: Spicy Vegetable Couscous

Serves: 4-8

INGREDIENTS 

  • 1/2 teaspoon vegetable oil
  • 2 green onions, chopped
  • 1 sweet red pepper
  • 1 garlic clove, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 1 cup chickpeas, cooked
  • 1 cup boiling water
  • 1 cup couscous
  • 1/4 teaspoon salt
  • 1/2 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 2 tablespoons fresh parsley
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cayenne

DIRECTIONS

  1. In a medium-size skillet heat the oil.
  2. Add green onions, sweet pepper, garlic, tomatoes and zucchini; saute 5 min, stirring.
  3. Remove from heat and keep warm.
  4. In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, until liquid is absorbed. Add the first mixture and fluff with a fork.

Recipe of the Week: Butternut Squash Risotto

Makes 4 servings (serving size: 3/4 cup)
Prep: 5 minutes; Cook: 14 minutes

Ingredients:

  • 1 medium butternut squash (about 1 3/4 pounds)
  • 1 cup microwaveable brown rice
  • 1 tablespoon olive oil
  • 1 large shallot, minced
  • 2 teaspoons minced peeled fresh ginger (optional)
  • 1 (14-ounce) can fat-free, less-sodium chicken broth
  • 1/2 cup grated fresh Parmesan cheese, plus additional for garnish
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions:

  1. Cut squash in half lengthwise. Scoop out seeds and stringy flesh. Place the squash halves, cut sides down, on plastic wrap in microwave. Cook on High 10 minutes or until cooked through. Scoop flesh into medium bowl, stir until smooth, and set aside.
  2. Microwave rice according to package directions, omitting butter.
  3. Heat oil in a medium saucepan over medium heat. Add shallot and optional ginger; cook 2 minutes, stirring. Add rice.
  4. Alternately stir in squash and broth, 1/2 cup at a time; wait until each is absorbed before adding more. Remove from heat; stir in 1/2 cup Parmesan, salt, and pepper. Serve in bowls & garnish with parmesan.

Recipe of the Week: Seedy Cherry-Quinoa Bars

Serves: 12

Ingredients:

  • Nonstick vegetable oil spray
  • 1 cup chopped almonds
  • ½ cup raw quinoa, rinsed
  • ¼ cup raw pumpkin seeds
  • ¼ cup raw sunflower seeds
  • 1 cup dried tart cherries
  • 2 tablespoons brown rice syrup
  • ¾ teaspoon kosher salt

Directions:

  1. Preheat oven to 350°. Coat 8×8” baking pan with nonstick vegetable oil spray; line with parchment, leaving overhang on all sides.
  2. Toast almonds, quinoa, pumpkin seeds, and sunflower seeds on a rimmed baking sheet, stirring occasionally, until golden brown, 10–12 minutes. Let cool.
  3. Reduce oven temperature to 200°. Process cherries, brown rice syrup, salt, and 2 Tbsp. water in a food processor until smooth.
  4. Transfer to a medium bowl and stir in toasted almond mixture.
  5. Press firmly into prepared pan and bake until no longer sticky, 20–25 minutes. Let cool, then cut into bars.

*Bars can be made 2 weeks ahead. Store airtight at room temperature
