Recipe of the Week: Instant Pot Rotini

Use your Instant Pot to put dinner on the table in just 35 minutes from start to finish!

Active time: 10 minutes
Total time: 35 minutes
Serves: 4

Ingredients:

  • 3 cups low-sodium chicken or vegetable broth
  • 2 tablespoons no-salt added tomato paste
  • 4 cups (12 ounces) dry whole-grain rotini pasta
  • 1/4 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons chopped fresh rosemary
  • Salt and black pepper, to taste
  • 1 small red bell pepper, thinly sliced
  • 3 small (6 ounce) boneless, skinless chicken breasts
  • 1 teaspoon salt-free garlic seasoning blend
  • 2 cups baby spinach
  • 1/4 cup Parmesan cheese, shredded (optional)

Directions:

  1. In the pot of an electric pressure cooker, whisk together the broth and tomato paste until the tomato paste is dissolved. Add the pasta, sun-dried tomatoes, olive oil, rosemary, 1/4 teaspoon salt and several grinds of pepper. Stir to combine. Place the bell peppers on top of the pasta. Season the chicken with the garlic seasoning and place on top of the pasta mixture, do not stir.
  2. Lock on the lid, select the Manual/Pressure Cook function. Adjust to high pressure and set timer for 4 minutes. Make sure the steam valve is in the “sealing” position.
  3. When the cooking time is up, carefully quick-release the pressure.
  4. Unlock the lid and transfer the chicken to a clean cutting board. Slice the meat into bite-size pieces and return them to the pot. Add the spinach and cheese and stir to wilt the spinach. Serve immediately.

Enjoying the Holidays Without Over-Indulging

The holiday season seems like a never ending stream of social engagements, parties, shin digs, and nights out with friends. The repetitive socializing around food and drink can raise concern for someone who has a fitness goal in mind. The fear of over-eating, a fitness set back, or gaining weight is often at the root of why someone may not enjoy themselves, or not attend altogether. We know that consistently making the right choices will breed the best results, but there are misconceptions that one bad meal or one bad day will ruin any progress. Luckily, there are a couple of helpful strategies to help keep sane and smiling through the holiday parties.

  • One bad meal does NOT throw progress into a downward spiral. If you get a flat tire, do you panic and slash the rest of them? No, you replace that one bad moment and keep the journey going.
  • Emotional and mental health is still health. If a fitness journey cuts into being able to enjoy time with family, friends, or oneself, then the fitness goal needs to be adjusted.
  • Allowing for small breaks in a pattern of eating will leave space to have a treat without feeling the need to binge and “fall off the wagon.” One cookie at a party carries a lot less guilt than having 10 cookies at 3AM on a Tuesday.

Let’s worry less about what we’re eating between Christmas and New Year’s, when what matters is what we eat between New Year’s and Christmas. Sticking with good habits year-round allows for a healthy balance when the holidays come around.

Recipe of the Week: Zucchini Linguine in JETS Sauce

Shout out to Peak Performance Fitness member, Wendie, for sharing her family’s recipe this week! Serve up this zucchini linguine with shrimp for Sunday night dinner. It’s prepared in homemade sauce, appropriately named for some Sunday football – JETS Sauce!

Ingredients:

  • 2 cans crushed tomatoes
  • 5 cloves of garlic (whole)
  • 5 cloves of garlic (minced)
  • ½ minced onion
  • 2 Tbsp olive oil
  • 10 basil leaves (fresh)
  • 24 large shrimp (peeled & deveined)
  • 2 large zucchinis (spiralized or shredded)

Directions:

  1. In a large pasta pot, pour in 2 Tbsp of olive oil on low heat. Once the oil is hot, toss in the whole garlic cloves. Cook until lightly browns. Toss in the minced garlic and onions and cook for 5 minutes.
  2. Toss in the crushed tomatoes. Add in 10 basil leaves and cook uncovered for 45 minutes on medium heat mixing occasionally so that the sauce doesn’t burn.
  3. Add in the zucchini and mix together so the sauce covers it all. Place a lid on the pot and cook for 15 minutes, stirring occasionally.
  4. Add in the shrimp, mix together and keep covered for 5 minutes or until pink.
  5. Serve it hot & enjoy!

Tips for Sticking with Your Exercise Routine

We asked Peak Performance’s own Exercise Physiologists about how they have created routine in their lives. From working out, to meal prepping to staying hydrated, read on for their best tips!

Summer is over it’s back to school and work. Whether you had a break or not, the start of a new (school) year presents a great opportunity to get into a new fitness routine! For everyone who forgot about fitness over the summer, here are a few tips for getting back on track this fall.

  1. Make a plan: “A failure to plan, is a plan to fail!” Take a look at your class/work schedule at the beginning of each week and make a plan to get in some form of exercise at least 3 times throughout the week. Make appointments with reminders on your calendars so you don’t “conveniently forget”, and remember your health is just as important for your future as work and school.
  2. Find a friend: Try to find a workout partner. Working out with a partner is a great way to challenge yourself and can be more fun than working out alone. A partner can help to motivate you to push beyond what you would normally do on your own, as well as hold you accountable on days when you are slacking.
  3. Have a goal: Make short term and long term goals. Long term goals can be losing a certain amount of pounds by the end of the year, or maybe participating in a race like the Massapequa Turkey Trot 5k we do every November here at Peak (wink wink nudge nudge cough cough). Short term goals can be even more helpful if the long term goals seem overwhelming. Making it to the gym 3 times in a week, or trying a yoga/spin/kickboxing class are some short term goals that are easy to accomplish and can get you on the right track.
  4. Keep it short: Days are already packed with school, work, homework, family and social obligations, no need to spend hours in the gym. As long as you stay consistent throughout the week, you can get great results from shorter (15-30 mins) workouts. Have an idea of what you want to do before you get to the gym. Walk in, be efficient, stay focused on your workout, and keep up the intensity.
  5. Eat and Sleep: Eat and Sleep. That’s it. Try to maintain a balanced diet, and make sure your drinking enough water. Plan rest days throughout the week and try get a healthy amount sleep each night (at least 6-8 hours). Recovery is key for achieving your fitness goals!

Tips for Establishing a Healthy Routine

What is a routine and why is it important to me?

Not to be confused with a popular French Canadian dish, a Routine is a task or behavior performed regularly. It can be daily, weekly, monthly, or yearly- and it can be anything from brushing your teeth, to changing the oil in your car, or getting to work and the gym. Each task is some part of every person’s life to some degree of regularity. In relative terms, a routine is what’s considered a normal pattern for someone. Although the “normal” can vary from person to person, it provides structure, familiarity and helps to form habits that can save time and energy (two of our most valuable resources).

How would I set up a routine to benefit my life?

Routine behavior is almost autonomous, meaning that we don’t give it much active thought from to start and finish. For this reason, it can be tricky to consciously kick an unhealthy pattern out for a more beneficial one. Some tried and true methods for positive routine forming involve some thought organization, a bit of planning, and most importantly time and patience.

First: Recognize the behavior that you would like to change or add. Write it down. Next: Take some time and write down your daily routine, then find out if your new goal or task fits into your current routine, and write it in. If the change is drastic, you may want to break it into smaller steps to make the transition easier. The difficult part of this process is taking the conscious effort over the next few days and weeks to perform that task as it fits. With consistency and repetition, that new task or behavior will become a habit, streamlining your life into a healthier version of itself.
